Green Peppers - I've always thought of them as the ugly less popular sister of the delicious yellow and red pepper myself and that's why I had an excessive (well 2) number of them in the fridge staring at me because I decline to add them to my cooking. So I googled 'green pepper recipes' to see what I could find, came across a stuffed pepper idea that used barley and cheese. I switched it up a bit, no cheese cos I'm trying to diet and barley takes literally an hour and a half to cook!
The Result: a tasty explosion!
Here's the stuff I put in, altogether is wonderful oh and I did use feta cheese which is a lot lower in calories than what the American recipe was suggesting (pepper jack)
Fry chopped mushrooms, onions, red pepper and garlic in olive oil. Boil some rice, hollow out your green peppers. When the rice is cooked add to the vegetables with tomato paste, cayenne chili powder, some tomato pesto and a dash of balsamic vinegar. Don't forget to season with salt and black pepper.
Chop some feta into cubes and put in the bottom of the hollowed out pepper, add the rice mixture, pat down and put the peppers in the oven for 25-30 mins.
Sprinkle with grated Parmesan and go for it! I just had them on their own but they would be great as a side with steak or chicken, and who knew the green pepper could taste so good!
